Mexican Fish Ceviche

Ingredients (serves 8):

2 pounds: fresh fish (albacore, sole, snapper, halibut, flounder)

1 - 1.5 cups lime juice

1 cup fresh diced tomato

1 sweet chopped green pepper

4 Tbsp chopped parsley or cilanto (preferred)

1/4 tsp salt

1/4 tsp pepper

2 chopped jalapeno peppers (to your taste)

2 Tbsp white vinegar

1 onion (red preferred)

avocado

 

Preparation:

1. Chop fish into cubes (1/2 inch)

2. Marinate fish in lime juice, in fridge, over night and stir often

3. A few hours before meal, mix in the rest of the ingredients after pouring off excess lime juice

4. Garnish with avocados and black olives if you wish
